RECIPE: Cherry Ripe Bliss Balls (V, DF, GF)

Continuing on the theme of ‘recreating the best chocolates from a box of Favourites’ (see my recipe for Chocolate Bounty Bliss Balls here), I made these delightful fruity bites to satisfy my craving for something sweet.


This recipe has NO protein powder but still packs a punch with some good fats and carbs as well as a natural sugar hit.



INGREDIENTS:

1 1/2 cup dates

1/4 cup cacao

1/4 cup cashews

1/4 cup sunflower seeds

1 cup cherries (I used frozen for this recipe)

1/2 cup coconut (shredded or desiccated) + extra for rolling

2 tbsp almond meal


METHOD:

  1. Add all ingredients to a high powered blender/food processor and blend until a soft dough mixture forms. If the mixture is too sticky, add more almond meal or other flour or choice.

  2. Roll the dough into balls and freeze until set. Store in the freezer in an airtight container and remove to slightly defrost just before eating.


RECIPE NOTES:

  1. The mixture will be quite gooey and will need to be stored in the freezer otherwise the texture will be extremely soft.

  2. I used frozen cherries for this recipe, so the results may be different if you you fresh but don’t be afraid to experiment!

  3. My go-to is my Ninja Foodi Power Nutri Duo as it has a built-in paddle at the base to push the batter closer to the blades.
